If you're looking for a new summer pasta salad recipe, we're sharing an Italian Tortellini salad that's refreshing and delicious! It's perfect for a lunch at school or work and for the beach or pool.
1 package of Cheese Tortellini
1 Salami, sliced
1 cup of Cherry Tomatoes, sliced
1 cup of Cucumber, sliced
1 can of Artichoke Hearts, chopped
1/2 cup of large Red Onion, diced
1 can of Black Olives, drained
8 ounces of Mozzarella cheese, cubed
1/2 cup of shredded Parmesan
1.5 cups of Italian Dressing
1 tablespoon of Italian Seasoning
How To Make:
Heat a saucepan to medium heat.
While the water is boiling dice, slice, and cube all the other ingredients.
Once the water is boiled, cook the cheese tortellini according to package directions.
When the tortellini is cooked, drain and rinse gently.
Add the cooled tortellini to a large bowl.
Mix the salami, tomatoes, cucumbers, artichokes, onion, mozzarella, and olives.
Add the parmesan and Italian dressing, mix well.
Sprinkle the Italian seasoning and top with more parmesan.
Refrigerate salad for 1-2 hours before serving.
Serve and enjoy!
