F-Factor Jalapeño Cheddar Muffins

Looking for a game day recipe or an everyday snack/meal? These F-Factor Jalapeño Cheddar Muffins will be a winner! They add a little kick, while being F-Factor approved! You can find the official F-Factor recipe here, we added our own touch to it!



2/3 cups of Bobs Red Mill finely ground Almond Flour, sifted

1 cup (4 scoops) of F-Factor's Unflavored 20/20 Fiber/Protein Powder

1 1/2 tsp of baking powder

1/2 tsp of garlic powder

1/2 tsp of salt

3/4 cups (about 3 oz) and 2 tbsp of reduced fat shredded sharp cheddar cheese

1/4 cup of nonfat Greek yogurt

1 large egg

1 egg white

2 tbsp of vegetable oil

Pam cooking spray

How To Make:

Preheat oven to 400 degrees.

Chop your Jalapeños into tiny slices.

Place almond flour, 20/20 powder, baking powder, garlic powder, and salt, in a medium mixing bowl.

Stir to combine, being sure to break up any clumps.

Mix in 3/4 shredded cheese (set remaining 2 Tbsp aside for topping once cooked).

Add greek yogurt, egg, egg white and oil, mixing well with a spatula until well-combined.

Spray the Pam cooking spray to a muffin tin.

Divide mixture 6 ways and sprinkle some cheese and add a Jalapeño slice on top.

Place in oven to bake for 10-13 minutes or until golden brown all over.

Remove from oven and allow to cool a few min.

Serve warm and enjoy!
