If you're looking for a quick and easy make-ahead breakfast for those busy mornings, or mornings when you don't want to cook, we've got you covered! We're sharing a simple quiche recipe that's made in a muffin tin. Less of a mess, less of a headache, and still delicious!
Ingredients:
6 eggs
1/4 cup of chopped onion (yellow is preferred)
1/2 cup of diced tomato
1 cup of chopped baby spinach
1 cup of shredded cheddar cheese
You can use whatever ingredients you and your kiddos like!

How To Make:
Preheat your oven to 350°F.
Whisk all the eggs in a bowl.
Slowly add each ingredients, one at a time, into the bowl. Mixing as you add them in, make sure all the ingredients are coated in egg.
Spray a muffin pan with cooking spray.
Pour the egg mixture into the muffin pan.
Bake for about 25-30 minutes.
Test the center of the muffins to make sure they’re cooked through.
Let the quiche muffins cool for about 2 minutes.
Remove them from pan.
Serve and enjoy!
